Paul Fleming has undoubtedly come a long way since growing up in Iberia, Louisana.  He attended Loyola University and his first professional experience in the dining industry began as a dishwasher at a local New Orlean’s restaurant called Saturday’s. He would work his way up to manager of the restaurant before moving on to more significant endeavors. Probably familiar with Ruth’s Chis (another native to the area) while working at Saturday’s, his first road to becoming the steak genius he is was purchasing the franchise rights from Ruth Fertel for California, Arizona, and Hawaii.   After giving Ruth’s Chris the national audience he did, he sold all his stores back to Ruth’s Chris. He goes on to co-create P.F. Changs (PF = Paul Fleming, who knew?) and then Pei Wei Asian Diner. He then took all this experience and more and finally opened up a restaurant bearing his name rather than his initials as he returned to his steak background and opened the first location in Newport Beach, California in 1998.
